Introduction

Number of Servings: 4

Ingredients

    1 lb Chicken Breast Boneless Skinless
    3 Tbsp Extra Virgin Olive Oil
    6 slices Bacon (I used microwaveable)
    4 -6 slices Mozzerella
    1 Cup Heavy Whipping Cream
    1/2 Cup Swanson Natural Goodness Chicken Broth
    1 tsp Garlic Powder
    1 tsp Parsley
    3/4 Cup Parmesan Cheese, grated
    1 Cup Chopped Baby Spinach
    3 Cup, zoodles (zucchini noodles)
    2 Tbsp butter

Directions

1.Cook bacon, chop, and set aside
2. Add olive oil and 1 T butter to skillet - cook chicken med/med high until cooked - remove chicken from pan when cooked
3. Add heavy cream, broth, garlic powder, parsley, parmesan cheese and whisk until it begins to thicken (add salt and pepper to taste)
4. Add spinach and simmer until it starts to wilt.
5. Add chicken back to pan and coat with sauce, place mozzerella cheese over chicken, sprinkle bacon over top.
6. Cover until cheese melts.
7. In a separate skillet, saute in 1T butter the zoodles 5-8 minutes until cooked ( depending on thickness).
8. Serve chicken over zoodles

Serving Size: makes approx. 4 plates
