    2 cup, cubes Eggplant, fresh
    1.5 cup, sliced Zucchini
    1 cup, chopped Peppers, sweet, red, fresh
    .75 cup Snow Peas, fresh
    6Tbs (1 can) Thai Curry Paste (Panang)
    13.5 oz Thai Kitchen Light Coconut Milk
    13.5 oz Thai Kitchen Organic Coconut Milk
    1 block Tofu, firm


Tips

Swap out veggies, protein or even curry type for many varieties.
Use less coconut milk for a spicier curry.


Directions

Sautee veggies and ginger in sesame oil.
Add curry paste and cook until fragrant
Add coconut milk
add tofu and stir carefully.
