Ingredients

    1.0 tbsp Canola Oil
    1.0 cup Asparagus, fresh
    1.0 cup, chopped Carrots, raw
    0.5 cup, diced Celery, raw
    1.0 medium (2-1/2" dia) Onions, raw
    10.0 small (1-3/4" to 2-1/2" dia.) Potato, raw
    1.0 cup, sliced Zucchini
    74.0 gram(s) bell pepper, red, sweet, raw
    7.0 cup Swanson Chicken Fat Free Chicken Broth Less Sodium
    4.0 serving Great Value Instant Mashed Potatoes (1/3 cup)

Directions

Dice all veggies & add to stockpot. Saute in canola oil. Add diced potatoes. Add chicken broth and instant mashed potatoes. Simmer until vegetables & potatoes are tender. Season with garlic salt & pepper to taste. This can also be made in a crockpot. Served with whole grain bread & molasses. Serving Size: Approx 16 1 cup servings
