Introduction

Ingredients

3 egg whites (room temperature)
3/4 cup Domino D'Lite sugar blend
1 tsp lemon zest
1 tsp corn starch
2 tsp lemon juice
1 pinch salt
Directions
1. Preheat the oven to 350 degrees, and line a cookie sheet with parchment paper.
2. Beat the egg whites until they form soft peaks.
3. Gradually add the sugar and continue beating until the mixture forms firm peaks.
4. Carefully fold in the rest of the ingredients.
5. Gently spoon the mixture into a Ziploc baggie and work it down to one corner. Cut the corner and pipe out the desired size cookie. They won't spread, so they can all lie close together.
6. Place the cookie sheet in the oven and reduce the temperature to 250 degrees.
7. Back one hour, and then turn off the oven and allow the cookies to dry 8 hours or overnight.
*Depending on how you pipe them out, you can get two dozen cookies or more.
