Introduction

Number of Servings: 4

Ingredients

    3 breast, bone and skin removed Chicken Breast (cooked), no skin, roasted
    3 cup Thai Kitchen Coconut Milk
    2 tbsp Coconut Oil
    2 cup, chopped Carrots, raw
    1 small Onions, raw
    2 fl oz Lemon Juice
    2 serving Liquid Stevia (by STANGHELLINI)
    4 tbsp Curry powder

Tips

Add or subtract curry powder based on own preference. Lemon juice is in place of lemon grass. Add salt and sweetener as well the way you like it.


Directions

Heat 2 TBSP coconut oil in a pan. Add cubed chicken breast. Brown on all sides. Remove from heat and throw into crockpot. Add the remaining ingredients and let simmer for a few hours. For low carb eat as is. For others, pour over rice.
