Introduction
This whole grain bread turns out lighter than some recipes. Very good! You can probably substitute more of the flour with oatmeal if you wish. Ingredients

2 c. water, 110-120 degrees
1 tbsp. yeast, rounded
2 c. whole wheat flour
1/4 c. vital wheat gluten
1/8 c. olive oil
1/8 c. applesauce
1/4 c. honey
1/2 tbsp. salt
1 c. oatmeal (or oat bran)
2 1/2 c. whole wheat flour
Directions
In mixing bowl, add the warm water (110-120), yeast and 2 c. flour. Stir well and let it sponge for 30 minutes.
Stir to blend and add remainder of ingredients except flour. Add one cup flour and mix on low. Add flour, 1/2 cup at a time, until the dough cleans the side of the bowl and is no longer sticky.
Let it knead in mixer for about 6-8 minutes.
After it has finished kneading, let it rise in the mixer until it is doubled.
Divide dough in half and form into loaves. Put in loaf pan sprayed with cooking spray.
Cover with bread cloth until bread rises to about 1 1/2 inches above the rim of the pans.
Bake in pre-heated 350 degree oven for 25-30 mins. Remove from pans and cover with a clean towel, which helps soften the crust.
Yields 2 loaves, 12 servings each.
