Ingredients

1 medium (2-1/2" dia) Onion, chopped
225 grams Mushrooms, fresh, chopped
1 cup, chopped Broccoli, steamed
1 cup Spinach, fresh, chopped
8 large Egg, fresh, whole, raw
.5 cup Almond Breeze Unsweetened Almond Milk
.5 cup Parmesan Cheese, grated
1 tsp Salt
1 tsp Pepper, black
1 cup, shredded Cheddar Cheese
Tips
This recipe reheats really well in the microwave if you undercook it just slightly.
Directions
1. In an oven-save saute pan, saute onions and mushrooms until onions are soft. Add the broccoli and spinach and stir until thoroughly mixed.
2. In a bowl, mix the eggs, almond milk, Parmesan cheese and salt and pepper. Whisk until thoroughly mixed together. Pour over the vegetables and cook until the eggs solidify only on the bottom.
3. Cover the eggs with the cheese and transfer the saute pan into the into a 350 degree oven for 15 minutes or until cook through.
Serving Size: Cut into 8 wedges
