Ingredients

2 cup Colby and Monterey Jack Cheese shredded
1 medium (2-1/2" dia) Onions, raw
20 oz Sams Club Seasoned Rotisserie Chicken
1 head, large (6-7" dia) Cauliflower, raw
8 serving Ortega Enchilada Sauce
1 cup Bush's, Black Beans
Tips
Cut the carbs even further by eliminating the black beans or replacing with shelled edamame.
Directions
Rice the cauliflower and place half in the bottom of a 9x11 baking pan. Drizzle with enchilada sauce. Debone the chicken and place half of the shredded chicken on top of the cauliflower. Top with a handful of the cheese and sprinkle with half of the chopped onion and a half cup of black beans. Repeat.
Bake at 375 for 30-45 minutes until golden and bubbly.
