Ingredients

    3.0 beets (2" dia, sphere) Beets, boiled
    1.0 large (3-1/16" dia) Oranges
    1.0 tbsp Extra Virgin Olive Oil
    1.0 tbsp Balsamic Vinegar
    1.0 fl oz Orange Juice
    1.0 tsp Grey Poupon Dijon Mustard
    1.0 dash Salt
    1.0 dash Pepper, black
    2.0 cup Arugula

Directions

Segment orange and set aside. Roast beets wrapped in foil for 50 minutes at 450 degrees. Peel them when they cool and slice. Wisk the rest of the ingredients and toss arugula orange segments and sliced beets together.
