Ingredients

    3 cup Cauliflower, raw
    0.5 cup mozarella
    0.5 cup Parmesan Cheese, grated
    2 small Egg, fresh, whole, raw
    1 serving bacon shortcut, ( eye no fat) (by DEBBY777)

Tips

These freeze well, so can be made ahead of time.
I used bacon fat (from the bacon I fried) to cook pancakes.


Directions

"Rice" cauliflower and steam for five minutes. While cauliflower is cooking, fry diced bacon. Beat eggs and add all ingredients together. Fry pancakes in non stick pan until cooked. Serve with dollop of sour cream and sprinkling of coriander
