Ingredients

    8 oz. sausage, 1/4" slices
    8 oz. chicken, cut into bite size pieces
    1 can (14.5 oz) stewed tomatoes
    1 green pepper, chopped
    1 bunch green onions, sliced (I used 1 yellow onion and cooked w/chicken & pepper)
    1 cup (measured uncooked) brown rice

Directions

Cook rice following box/bag's instructions.

Heat small amount of oil or non stick spray in skillet until hot. Add chicken, sausage, pepper, and onion. Cook 5 minutes, stirring occasionally.

Stir in tomatoes with their juice; heat to boiling on high. Add cooked rice. Reduce heat to low. Cover and simmer 10 minutes. If using onions and want more crunch, add them at the end.

Serve with salad, bread, crackers...you can add more veggies...more tomatoes, juice, and water for more of a soup...the possibilities are endless!
