Introduction

Ingredients

    2 tbsp Extra Virgin Olive Oil
    1 15.5 oz can Dark Red Kidney Beans, drained & rinsed
    1 15.5 oz can S&W Premium Chili Beans, drained & rinsed
    1 15.5 oz can S&W Premium Black Chili Beans, drained & rinsed
    1 7 oz can Ortega Diced Green Chiles, drained & rinsed
    1 4 oz can Ortega Diced Jalapenos, drained & rinsed
    1 7 oz can Chipotle Peppers in Adobo Sauce
    1 32 oz carton of Swanson Beef Broth, 50% reduced sodium
    1.5 lbs 80/20 Ground Beef
    1 medium yellow onion, diced
    1 medium red bell pepper, diced
    1 medium yellow bell pepper, diced
    1 medium orange bell pepper, diced
    1 Jalapeno Peppers, diced & seeds removed
    2 Serrano Peppers, diced & seeds removed
    2 cloves of Garlic, diced
    2 tbsp Chili powder
    2 tbsp Ground cumin
    1 tbsp Paprika
    1 tbsp Dried Oregano

Tips

Drain & rinse canned items for lower sodium, and/or substitute all canned items for reduced-sodium varieties. Reduce even further by using un-canned beans.

Serve with sour cream & fresh lime & cilantro as desired (calories not included in recipe).


Directions

Heat olive oil in a pan over medium heat. Add onion. Cook until almost translucent, about 2-3 minutes, then add garlic. Stir until fragrant, about 30 sec-1 minute, then add ground beef. Stir, using spatula or wooden spoon to break meat into smaller chunks, cooking until beef is brown and no pink is showing. Drain excess liquid & fat, then add beef, onion, and garlic mixture to slow cooker.

Add the rest of the ingredients to the slow cooker, stirring to blend spices with beef, beans, and vegetables. Cook on low heat for 6-8 hours, stirring & tasting occasionally and add additional spices as needed/to taste.

Serving Size: 8 equal servings (approx. 2 cups each)
