2 cup Mashed Potatoes
1 can (12 oz) yields Yellow Sweet Corn, Canned
.5 cup Bread crumbs, dry, grated, plain

Arrange on a baking sheet covered with parchment paper and spritz with olive oil. Broil about 8-10" from heat for about 5 min. (watch them!) When the crumbs start to look toasty, remove from the oven and flip; spritz the other side with OO. Broil again for 5 more min. or until browned and heated through.
