Introduction

Number of Servings: 6

Ingredients

    1.5 lbs 90% Lean Ground Beef from Sirloin
    1 large Spanish onion (red onion), chopped
    1 Green Pepper (bell pepper), chopped
    1 Jalapeno Pepper, diced
    3 cloves Garlic, minced
    10 oz Ro-Tel No Salt Added Diced Tomatoes & Green Chilies , drained
    1 Large egg
    2 oz. 2% milk
    1 tbsp Ground Cumin
    1 tbsp Chili powder
    1 tsp Ground Cayenne Pepper
    10 Premium Crackers (Unsalted tops) crushed

    Sauce:
    1 tsp Spicy Brown Mustard
    1 tsp unpacked Brown Sugar
    1 tsp Tobasco, green sauce
    4 tbsp Heinz No Salt Added Tomato Ketchup

Tips

Great with garlic smashed red potatoes and no salt green beans.
Make sure loaf is 165 degrees F. in center with thermometer.


Directions

Preheat oven to 350 degrees F.
Meatloaf:
In a large mixing bowl, add onion, jalapeno pepper, bell pepper, garlic, tomatoes and green chiles, egg, milk, and spices. Mix until well combined.
Add crushed crackers and mix.
Add Ground beef and mix gently until combined. (If mixture is too wet, more crackers can be crushed and added.) Do not overwork.
Form mixture into a lightly greased 5x9" loaf pan.
Spread 1/2 of sauce mixture over loaf and and bake for 1 hr.
Put rest of sauce on loaf and bake for an additional 15-20 minutes.

Sauce:
Add all ingredients and mix until well blended.
