Introduction

So I just started living alone again. . .have a slight egg allergy so I only indulge once in a while. . .am trying to conserve both calories and cholesterol and, frankly money. . .So I found a premade salad, dissected it and used the spinach, carrot mixtue, feta cheese and literally one quarter of a small container of cream cheese left over from an expensive hotel stay, coconut spray from the dollar store and voila, a low calorie, low budget, easy on the allergy brunch or for me late lunch. The one egg was not that hard to use, and I even used a 10 inch steel pan. The egg did not stick, the mixture of feta and cream cheese was a delight, and the spinach and carrot salad, after sautéing, was saved. I added the leftover sesame seeds and dried blueberries to a chex mix and saved the dressing for another salad. Ingredients

    1 serving Egg whole - medium per egg
    1 serving Cheese - Feta, Crumbled - Treasure Cave x 1/4 Cup
    .25 oz Philadelphia Cream Cheese
    .5 cup Spinich - fresh Queen Victoria baby spinich
    .25 serving Carrot Sticks (baby) 3 oz serving
    0.25 gram coconut oil cooking spray (by KATHEBOS)

Tips

Of course a non stick smaller pan would work better, but I have yet to purchase one! Still getting over the sticker shock of the new home! Adding milk would probably make the egg more fluffy. This is really for me it is low carb, low lactose, gluten free. . .although a nice wheat half muffin with some glorious real butter would help! Its on my list for next week, along with some smaller pans and a pasta pot!


Directions

Spray a 10 inch skill with coconut oil spray. Bring to medium heat, saute spinach and carrot mixture until slightly wilted. Remove, and re-spray as necessary; add whipped medium egg. Evenly coat pan with egg until slightly cook still soft on top and add spinach mixture. Top with feta and cream cheese dots. Carefully turn 1/2 over. Let sit to melt chees and serve yourself!
