Ingredients

    2 cup Chickpeas (garbanzo beans)
    1 serving Trader Joes Coconut Cream
    1 cup Del Monte Diced Tomatoes, No Salt Added (or 1 cup fresh diced tomato)
    1 large Onions, raw
    1 tsp Ginger, ground (or grated fresh)
    2 tbsp of tikka masala spice powder
    2 clove Garlic
    1 cup, chopped Kale
    1 tsp Better that bouillion veggie broth
    1 cup water

    6 servings of brown rice (3 cups cooked)

Directions

Chop the onion, kale, and garlic. Cook the onions in nonstick (or lightly oiled) large pan until they begin to soften. Add the chickpeas, tomatoes, onion, spice powder, ginger, garlic, kale, and bouillon paste. Cook for 10 minutes. Add the coconut cream. Stir and Serve over brown rice.

Serving Size: Makes six 3/4 cup servings
