Ingredients

6 sprays of canola oil (2-3 second spray)
2 turkey breakfast sausage patties, chopped into small pieces
6 tsp finely diced poblano pepper
6 tbsp 1% low fat cottage cheese
6 large eggs
42 grams (6 tbsp) shredded Gouda Cheese
Directions
PRE-HEAT oven to 400 degrees.
IN each of six (6) separate small bowls place 1/6 of the sausage, 1 tsp poblano pepper, 1 Tbsp cottage cheese and 1 egg. With a fork whisk the ingredients until well mixed.
ADD 7 grams (1 tbsp) of gouda cheese to each bowl. Stir again.
SPRAY 6 muffin tins with spray oil. Pour the contents of one bowl into each muffin cup.
BAKE muffins for 20 minutes. Turn off the oven and open the door a few inches. Leave the muffins in the oven for another 20-30 minutes until just warm.
REMOVE the egg muffins from the tins and place in an airtight container. Refrigerate until ready to use.
TO re-heat, place a muffin on a plate cover with a damp paper towel and microwave at 50% power for 30-60 seconds.
