Ingredients

    6 serving RICE - Dynasty Jasmine Rice 1/2 cup cooked
    .25 cup, chopped Green Peppers (bell peppers)
    .25 cup, chopped Peppers, sweet, red, fresh
    .25 cup, chopped Onions, raw
    .25 cup, diced Celery, raw
    4 oz Tomato, grape (3oz = appro 12 tomatoes)
    2 clove Garlic
    2 tbsp Canola Oil
    2 tbsp Wishbone EVOO Garlic Basil Olive Oil Salad Dressing/SS=2 Tbsp
    2 tbsp Wishbone EVOO Garlic Basil Olive Oil Salad Dressing/SS=2 Tbsp
    4 tbsp Kikkoman Low Sodium Soy Sauce

Tips

I keep pre-chopped vegetables and cooked rice in the fridge for times when I want to throw something together quickly.

The cook time seems long because of the roasted tomatoes but it's relatively a quick and easy dish to make.


Directions

Tomatoes
-Mince garlic
-Sea Salt & Black Pepper to taste
-Drizzle EVOO (any kind)
-Toss
-Preheat oven to 400 degrees
-Bake for 40 minutes (or as desired)

Rice
-In a hot pan/wok, saute remaining vegetables in canola oil (or oil of your choice) for about 3-5 minutes on medium high heat.
-Add cooked rice and toss (stir) until rice is heated through
-Add soy sauce, give a quick toss (stir)
-Remove from heat
-Add roasted tomatoes, toss (stir)
