Ingredients

    3 c. Basmati rice, rinsed and soaked
    2 lbs. lean beef (with bone for added flavor) cut into bite sized pieces
    4 md. tomatoes, chopped
    3 md. onions, chopped
    5 cloves of garlic, mashed
    1 tbsp fresh ginger root, mashed
    1 tbsp salt
    1 tsp red cayanne pepper
    2 tsp ground coriander
    2 tsp turmeric powder
    2 tsp Indian gharam masala
    6 c. water for rice
    2 c. water for cooking meat

Directions

In a large pot, heat cooking oil and brown meat on all sides. Add bone also if using for flavor. Remove meat from pan. Add chopped onion, garlic and ginger and sautee till golden. Add tomatoes and a little water and simmer till a thin paste is formed. Add spices and salt and mix well. Add meat back to the pan and remaining two cups of water. Cook on medium heat until meat is tender and water has evaporated. (about 20 minutes)

When meat is tender, add 6 cups of water and bring to a boil. Drain the water from the the rinsed and soaked rice and add to the pan. Cook on low to medium heat until rice is tender. Add more water if necessary. Let the dish stand about 10 minutes before serving. Serves 10-12

Server with fresh green salad and yogurt raita.
