Ingredients

1 tbsp Sunflower Oil
1 clove Garlic, diced
2 tsp Ginger Root, diced
1 tsp Paprika
0.5 tbsp Chili powder
0.5 tsp Cumin seed
0.5 tsp Cinnamon, ground
0.5 cup, chopped Onions, raw
0.5 cup, diced Celery, raw
75 grams Lentils
225 grams Vegetable Broth
Salt and Pepper to taste
30 grams Yogurt, plain, low fat
Tips
You can add in carrots with the onions and celery. Before serving you can add some lime juice.
Add some chopped cilantro on top of the yogurt.
If you don't have fresh ginger and garlic, use powdered versions instead and combine them with the other spices before adding to the pan and start cooking with the onions.
Directions
On high heat, fry the diced garlic and ginger in the sunflower oil. Let it cook for 1-2 minutes
Mix paprika, chili, cinnamon and cumin and add it to the pan and combine with the garlic and ginger.
Add onion and celery and cook for a 3-4 minutes.
Add lentils and broth and bring to a boil. Let simmer for at least 20 minutes or until lentils have reached the desired consistency.
Once done season with salt and pepper to your liking.
Add two table spoons of yogurt on top of your plate.
