Introduction

This is an easy spicy soup that is low fat and very filling. This is an easy spicy soup that is low fat and very filling.
Number of Servings: 4

Ingredients

    0.5 pound boneless chicken breasts, cubed
    3/4 cup chopped onion
    3 cloves garlic, minced
    1 teaspoon ground cumin
    1 can (14 ounces) chicken broth
    1 cup chunky salsa
    1 can (about 15 ounces) small white beans, rinsed and drained
    1 cup frozen whole kernel corn

Directions

Add enough water in a sauce pot to cover chicken. Add chicken and boild until done, then cut it up into small pieces

Add onion, garlic and cumin , broth, salsa, beans and corn. Heat to a boil. Cover and cook over low heat 20 minutes.

    Hmmm I just bought a bunch of black beans today cause all the recipes I ever find call for black beans, and they had a good sale on them...I'm guessing black beans would be okay in this recipe? - 6/16/08
