Ingredients

2 tbsp Extra Virgin Olive Oil
4 serving Garlic, Chopped or Minced (SS=1 Clove) (by LOMBIE)
0.5 tsp Cumin seed
0.5 tsp Salt
10 dash Pepper, black
2 fruit (2" dia) Limes
4 tbsp Fresh cilantro (by JAMIERDH)
28 oz Chicken Leg (Drumstick and Thigh) roasted, broiled, or baked with bone, but removed before weighing,
Directions
-Combine oilive oil, minced garlic, cumin, salt, and fresh black pepper(10-15 cranks)
-add 1 tsp lime zest and 3 tbsp juice from lime. Pull leaves from 1/4 cilantro bunch and chop finely, then add.
-pour marinade into ziplock with drumsticks. coat chicken, then place in fridge for minimum of 30 minutes.
-preheat oven to 400 degrees. and chicken to casserole dish in one layer. Cover with remaining marinade.
-Bake for 40-45 minutes basting once or twice throughout. for more browning broil for 2-4 minutes at the end of cooking time.
-Ensure chicken reaches 160 degrees internal temp
-garnish with 1/4 bunch fresh cilantro and limes
