Ingredients

    1 head, small (4" dia) Cauliflower, raw
    0.5 large Onions, raw
    1 cup (not packed) Raisins
    .5 cup pieces or chips Walnuts
    2 oz Cheddar Cheese
    2 large Hard Boiled Egg

Tips

I use this as a base once the dressing is added it is my lunch. Put lettuce at the bottom of a Budha bowl and I add .5 cup of this salad along with 2 ounces of hot chicken slices add .5 cup grain and 2 tablespoons of my favorite peanut dressing and I have supper. Take the whole salad with your favorite dressing for a potluck, picnic or Bar-B-Q and you have a vegetarian dish


Directions

In food processor pulse cauliflower and cheese till they look like rice.
Dice half a large red onion, 2 large eggs.
Stir all ingredients together in a large bowl.
Measure out 9 loosely packed 1 cup servings
