Meatballs are an undervalued dinner option, in our opinion. If you agree with us, you're going to love this entree. You can choose a generous portion of either salmon or ground beef and ground pork meatballs, which we layer over oven roasted broccoli and quinoa. Ingredients

    1 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry
    24 oz Meatballs, Frozen
    1 package (10 oz) Broccoli, frozen
    12 tbsp Ketchup, Heinz
    .2 cup, unpacked Brown Sugar
    2 tbsp Honey
    2 tsp Garlic
    4 tbsp Vinegar - Natural Rice Vinegar (Nakano)
    4 tsp Lea & Perrins, Worcestershire Sauce
    .2 cup, chopped Onions, raw
    2 tsp dry mustard powder (by ANDY99)
    1 dash Salt
    1 dash Pepper, black

Directions

Prepare quinoa according to package directions.

Drizzle broccoli with olive oil then sprinkle with salt and pepper. Roast at 425 for about 15 minutes, until edges are browned.

In a saucepan, brown the minced garlic and onion in olive oil for 3 or 4 minutes. Add brown sugar, dry mustard, vinegar, Worcestershire sauce, and honey. Stir to combine and simmer for 3 to 4 minutes. Add the ketchup and 1 cup water. Bring to a boil then reduce heat to low and simmer for 15 minutes.

Layer the prepared quinoa in the bottom of a 9 x 13 baking dish. Spread broccoli over top of that then place frozen meatballs over the broccoli. Drench with sauce.

Bake at 350 for 20 minutes.
