Ingredients

    3.0 ounces Chicken Breast (cooked), no skin, roasted
    0.5 cup, chopped Carrots, raw
    1.0 cup, chopped Kale
    0.25 cup Sun Dried Tomatoes
    1.0 cup 365 Organic Quinoa
    1.0 serving Cheese - Feta, Crumbled - Treasure Cave x 1/4 Cup
    4.0 serving Pesto, Priano ALLA GENOVESE PESTO, 2tbs (30g)

Directions

Cook quinoa in chicken broth until tender. Saute kale and carrots for a few minutes in a small amount of olive oil. Mix kale and carrots with quinoa add chopped sun-dried tomatoes and the chicken breast sliced into bite-size pieces. Stir in the feta cheese and add pesto to taste. Chill Serving Size: Makes 8 1/2 cup servings
