Ingredients

    1.0 medium (2-1/2" dia) Onions, raw
    3.0 clove Garlic
    1.0 serving 1 Med. Green Bell Pepper
    100.0 Grams Mushrooms, fresh
    800.0 Grams Canned Tomatoes
    2.0 tsp, crumbled Bay Leaf
    460.0 gram chicken breast skinless
    2.0 tbsp Extra Virgin Olive Oil

Directions

Peel and chop onion,pepper and garlic, slice mushroom. Fry all till onion is translucent. Add tinned tomatoes and bay leaves Simmer on a low to medium heat for ten minutes,stirring often. While the sauce is cooking , season The raw chicken with salt and pepper. Pan fry the chicken over a medium heat until browned. Remove chicken from the pan and slice into thick slices then add to the sauce mix. Simmer for ten more minutes. Then serve.
