Ingredients

4 cup slices Peaches, fresh
0.125 cup Flour - Gold medal all purpose flour
1 lemon yields Lemon Juice
9 tsp Raw Sugar - Sugar in the Raw
1 tsp Cinnamon, ground
2 cup Quaker Oats Old-Fashioned Rolled Oats
5 tbsp Butter, salted
.5 cup, chopped Pecans
0.25 cup Flour - Gold medal all purpose flour
.5 tsp Salt
Directions
Combine fruit, 2T flour, juice from 1 lemon, 2T raw sugar, and 1/2 tsp cinnamon together and spread on the bottom of baking dish.
Next combine rolled oats, melted butter, 1 T of sugar, 1/2 tsp cinnamon, almonds. 1/4 C flour, and salt. Mix well. Press oat mixture onto the top of the fruit mixture.
Bake at 400 for 10 minutes and then turn the oven down to 375 for additional 20-25 minutes. If the top browns too quickly, lightly cover with foil.
I have used almond flour in place of regular flour for a gluten free version. (Just make sure your rolled oats are also gluten free)
