Ingredients

    12 oz Turkey, Ground turkey, 93% lean
    .5 cup, chopped Onions, raw
    .5 cup, strips Green Peppers (bell peppers)
    1 serving Del Monte Diced Tomatoes (Zesty Mild Green Chiles) (by ANWEN_RIDER)
    1.5 cup Beans, black
    1 cup, sliced Zucchini
    6 tsp Old El Paso Taco Seasoning
    .5 cup Salsa
    .5 fruit without skin and seeds Avocados, California (Haas)

Tips

If you aren't dairy free, add some low-fat cheddar cheese and/or sour cream for a nice creaminess.


Directions

Put the turkey in a pan over medium heat. As it starts to brown, add the taco seasoning, onion, and green peppers and stir.

While the turkey mixture is cooking, use a mandolin or knife to shave thin slices of zucchini

When the turkey is fully cooked, add in the tomatoes and black beans, combining well. Cook until everything is heated through.

Spray your pan with non-stick cooking spray. Put town a layer of zucchini slices, the top with turkey mixture. Repeat until you have used all of your turkey mixture. Top with zucchini.

Bake at 350 degrees for 20-30 minutes or until zucchini is tender. Top with your favorite salsa and some avocado chunks and enjoy.
