Ingredients

32 oz Beef, 90% Lean Ground Beef from Sirloin
1/4 cup finely chopped Onions, raw
1/4 tsp garlic powder
One 16 oz can Green Enchillada Sauce
One 16 oz can Red Enchillada Sauce
20 White Corn Tortillas
1 cup, shredded Cheddar Cheese
Tips
When I make this for my family, I do one 9x9 pan of 10 echiladas without cheese and one 9x9 pan of 10 enchiladas with cheese.
Directions
Brown ground beef with the onions and garlic powder, crumbling the beef into tiny pieces. Allow to cool some if you have time.
Combine the green and red enchilada sauces into one batter bowl.
Add about 1 cup of the combined sauce to the ground beef and stir until coated.
Preheat oven to 375 degrees F.
Warm the tortillas in the microwave with a wet paper towel for about 1 minute to make them soft for rolling.
For each tortilla, place about 3 Tbsp of beef in the tortilla and a small sprinkle of cheese. Roll the tortilla and place folded side down in a large baking dish, like a 9x13 glass pan.
Repeat with each tortilla. They should fit very snugly in the pan.
Sprinkle any remaining beef on top of the completed enchiladas. Then pour the sauce evenly over the enchiladas.
Sprinkle the remaining cheese on top of the enchiladas.
Bake at 375 degrees F for 20 minutes.
