Squash and Sweet potato soup Squash and Sweet potato soup
Number of Servings: 6

Ingredients

    1.5 sweetpotato, 5" long Sweet potato
    3 cup Butternut Squash
    1.5 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can)
    .25 cup, chopped Onions, raw
    1 clove Garlic

Tips

This is even better if you cook the squash and sweet potato in chicken broth instead of the water


Directions

cube squash and sweet potatoes and boil in 3-4 cups water. Sautee onion and garlic. Blend all in blender. Add salt and pepper, .5tsp nutmeg, 1tsp cinnamon, and a dash of caynnene pepper if desired. Add can of cocount milk, mix well and heat back up.

Serving Size: About 6, 1-1.5 cup servings
