Ingredients

    1.6 cup Canned Goods: Thai Kitchen Organic Coconut Milk (13.66 oz can)
    1 cup, chopped Onions, raw
    0.25 cup Pepper - Pablano - Raw - 1 Pepper (by LCWP2000)
    1 cup, chopped Red Ripe Tomatoes
    8 oz Cod (fish)

Directions

At the time of cooking, chop a large tomato or lots of cherry tomatoes to taste, and open a can of coconut milk. Remove prepped ingredients from your freezer. Pour coconut milk into a medium saucepan and simmer with onions, tomato and peppers, seasonings to taste. When tomatoes begin to break down, add Cod and simmer for 3 to 5 minutes. Fish will be cook quickly and be flaky to a fork. Do not over cook. Serve with Gluten Free Crackers or brown rice.
