These are best served straight out of the oven, when they're still a bit gooey inside from the delectable cheese. You can't just have one though- consider yourself warned. Ingredients

500g tapioca flour
300 mL skim milk, divided
½ cup canola oil
200g grated parmesan cheese
2 eggs
Directions
Preheat oven to 450F.
Put the flour in a stand mixer with paddle attachment or a very deep bowl with a hand mixer at the ready.
Boil 250 mL milk with the oil.
Drizzle the milk mixture slowly into the flour while beating at low speed until all the flour is moistened.
Add the eggs and beat well on medium speed.
Mix in the remaining milk.
By hand, stir in the cheese, making sure it is well distributed.
With wet hands, form into small balls and place on sheets 1" apart.
Place into the oven and immediately reduce the temperature to 400F.
Bake for 25 minutes.
Serve warm!
