Introduction

Tigernut flour gives these pancakes a bit more lift than the simple cream cheese and egg version of keto pancakes. Coconut flour or almond flour can be substituted for tigernut flour with very little change to the nutrition profile at these quantitites.     4 oz Cream Cheese
    .25 cup Ground Tiger Nuts (100g) (by JO_JO_BA)
    4 large Egg, fresh, whole, raw
    4 tsp Swerve All Natural Sweetener (by JANIS-IRENE)

Directions

Blend with a hand-blender till thoroughly mixed. Cook over medium-low heat until nearly dry on top, then flip and cook for another 20-30 seconds.
