Ingredients

1.25 cups uncooked brown or green lentils, rinsed and drained
2 8 oz cans tomato sauce (or one 15 oz. can
1.5 cups canned diced tomatoes, no salt added (one 14.5 oz. can)
1.5 cups water
1 medium onion, diced
1 medium red bell pepper, diced
1 medium green bell pepper, diced
1 medium carrot, grated
3 oz. spinach chiffonade
3 cloves garlic, minced
1.5 tbsp chili powder
2 tbsp ketchup (no high fructose corn syrup)
1 tsp prepared mustard (yellow or other)
1 tbsp tamari or say sauce
.5 tsp cumin
.5 tsp onion powder
Tips
Other veggies can be shredded or diced and "hidden" in this chili.
Directions
Add all ingredients to slow cooker. stir to combine. cook on low four hours.
