Ingredients

    4 bell peppers
    Onions, raw, 1 cup, chopped
    2 cloves garlic, diced
    Salt, .5 tsp
    Pepper, black, .5 tsp
    1/2 lb Ground beef, extra lean
    2 cup brown rice, cooked
    2 tsp italian seasoning
    28 Oz can tomato sauce
    1 cup cherry tomatoes
    Tomato Paste, .33 can (6 oz)

Directions

slice the tops off of the peppers, clean and remove seeds. Dice the removed tops of the peppers for the stuffing mixture.

Combine ground beef, rice, onion, garlic, diced pepper tops, and half of the italian seasoning, salt and pepper. Place mixture into pepper shells.

At the bottom of the crockpot, combine tomato sauce, paste and remaining salt, pepper and seasoning. Mix in cherry tomatoes.

Place peppers in bottom of pot, them spoon some of the tomato sauce mixture over them. Cover and cook on low 8-10 hours.

    This was good. Next time I'll add a little more spices, but I'll make this again. - 9/14/08
