Ingredients

2 large potatoes, with skin, (3" to 4-1/4" dia.)
1 oz Monterey Cheese
1 oz low fat cheddar
1/2 cup skim milk
1/4 c. chopped scallions
1 tsp garlic powder or 1 garlic clove, mashed
Directions
Slice potatoes thinly. If you're multiplying the recipe, use a mandoline slicer to save time.
Chop scallions finely, including both green and white parts.
Arrange potatoes in a microwave-safe dish and evenly distribute the scallions around.
Bake for 4 minutes on high in microwave.
While the dish is cooking, add the garlic to the milk. Take out the potatoes and cook the milk mixture for 2 minutes on high in the microwave.
Add the milk mixture to the potatoes, being sure to distribute it evenly. If you don't want the potatoes to be too garlicky, strain out the garlic bits before adding.
Sprinkly the cheese on top, taking care to distribute it as evenly as possible.
Microwave an additional 2 minutes. If you like the cheese crusty, pop the dish into the oven or toaster oven for 5 minutes at 350 degrees.
