Introduction

Number of Servings: 4

Ingredients

    1/2 butternut squash (medium size) chopped into small cubes.
    1 small onion (chopped)
    1 clove of garlic.
    Handful of spinach.
    4 cups of water (800ml).
    1 cup of skimmed milk (200ml)
    1 teaspoon of salt.
    1 teaspoon of pepper.
    1/2 teaspoon of nutmeg (optional)
    1 chicken oxo stock cube (optional)

Directions

Cube butternut squash, chop onion and chop garlic.
Place butternut squash, onion and garlic in pan with water, salt, pepper & stock cube.
Bring to boil and simmer for 15 mins or until buttrenut squash is soft.
Take off heat, add milk, spinach and nutmeg and blitz the soup until smooth.
Eat and enjoy.
My daughter said she didn't like butternut squash but she loves this soup.

    i made this today adn although it tasted ok if i were to make it again i would use about half as much liquid. - 12/2/08
