Yummy meatless sandwich Yummy meatless sandwich

Ingredients

    2 slices low cal bread, I use sara lee delightful wheat
    1/2 avocado, mashed
    handful of alfalfa sprouts
    couple of tomatoe slices
    salt and pepper to taste

Directions

Toast bread if desired, mash avocado and spread on toast, cover with alfalfa sprouts and tomato slices season to taste. Cut in 1/2 and enjoy!

    I make this sandwich all the time, except I add cucumbers. I thought this recipe was going to have Green Goddess dressing incorporated into it and I was disappointed! =) Still a tasty sandwich! Sometimes I take a laughing cow and mash it with the avocado also. - 4/22/09

    how do you mash the avocado? It was too hard to mash for me - do you cook it first. I never made one before, but this sounded good and so many liked it I would love to try. Could you please give some more preparation instructions? Thanks. - 4/13/09

    to mash the avacado, just cut a ripe avacado in half take out the seed scoop the meat into a bowl and mash it with a fork, ripe avacado is soft
