Ingredients

    2 Tablespoons Canola Oil
    !1 Medium Valdalia Onion diced
    3 Stalks of Celery
    1 Sweet Green Bell Pepper
    1 Clove crushed Garlic diced
    1-2 Medium Zuchiny
    1-2 Small Yellow Squash
    1-2 Tomatoes Diced
    3/4 cups of brown rice (add to 2-3 cups of boiling water with 1-2 Beef Boulion cubes and
    add 2 Tablespoons of Canola Oil to water. .. )
    Sharp Cheddar Cheese

Directions

Prepare brown rice to cook and cover to steam after most water is absorbed. Put Conola Oil (2 Tbs) into frying pan, heat up and add onions, celery and bell peppers. Crush garlic and dice. Add to vegetables in pan. (Continually stir) Add chopped Zuchiny, Squash, and Tomatoes. Cover and Simmer. Salt and Pepper to taste. Shred Sharp Cheddar Cheese.

On a platter pour out a bed of rice. Add vegetables on top of the rice. Sprinkle cheese over the vegetables and serve.
