Ingredients

    1 can rinsed white beans
    1 tsp olive oil
    1 tbsp lemon juice
    12 large cooked shrimp
    2 cups red roasted peppers
    4 cups Arugula
    1 tsp olive oil (for dressing)
    Squeeze of lemon (for dressing)
    Salt and pepper to taste

Directions

Combine rinsed white beans with 1 tsp olive oil.
Squeeze lemon on beans and add salt and pepper.
Mix in shrimp and roasted peppers.
Toss arugula with olive oil and lemon juice.
Serve bean salad over tossed arugula.
