Ingredients

    4 cup Cauliflower, raw
    1/4 cup, chopped Onions, raw
    200 grams Chicken Breast, with skin
    1/4 cup, chopped or sliced Red Ripe Tomatoes
    0.5 cup pieces Mushrooms, fresh
    4 Green Chilli
    1 large Egg
    1 cup Frozen Mixed Veg
    Spices 1/4 to 1/2 tsp each (turmeric, cumin powder, onion powder, paprika powder, chilli powder and cayenne powder)
    1 to 2 tbsp of light soy sauce
    1 tsp balsamic vinegar
    Salt and pepper to taste.

Directions

Use food processor to grind the cauliflower down to rice like. Do not over grind them. Microwave the cauliflower rice for about 5 to 6 minutes on high. Let it cool for a few minutes then drain out the excess water from the cauliflower rice using a clean cloth. In a sauce pan add 2 table spoon of olive oil and stir fry chopped onion. Once browned, add in chopped chicken breast stir fry until cooked. The add in chopped tomatoes, mushrooms and mixed frozen veggies (peas, carrots and corn). Stir fry until they are slightly soft. make room at the center of the pan and pour in 1 beaten egg and scramble them. Then mixed all together and add in spices (salt, pepper, turmeric, chilli powder, paprika, cumin powder). Stir and incorporate all. Then add light soy sauce and a little balsamic vinegar. The spices, soy sauce and balsamic vinegar is to be added to taste. Lastly add in the cauliflower rice and mix well. Serve while hot.
