Ingredients

    12 oz (2 cans) canned pink salmon, boneless/skinless, drained well
    4 hard boiled egg whites, chopped
    1 tbsp capers, drained
    1 cup diced raw zucchini
    3/4 cup finely diced raw red bell pepper
    1 tsp lemon juice
    4 tbsp fat free mayonnaise
    1 tbsp yellow mustard
    2 tbsp chopped walnuts
    black pepper to taste (I used 1/2 tsp of the new McCormick's Smokehouse flavor and it was awesome!)

Directions

Flake the drained salmon into a medium bowl. Stir in all of the remaining ingredients and mix until combined. Really good over some crunchy romaine lettuce or on whole grain crackers.

Makes 4 servings, about 1 cup each.
