    1/2 cup dried brown rice (1 c. cooked)
    1 cup edamame, shelled (steamed)
    1/4 cup dried cranberries
    1/2 cup fresh parsley
    1/4 cup fresh mint leaves
    2 oz feta cheese
    10 kalamata olives, pitted and halved
    3/4 tbsp hot pepper flakes
    1 tbsp olive oil
    1 tbsp lime juice (one small lime)


Cook the rice and steam the edamame. Toss with the other ingredients and then split into two bowls. Perfect simple dinner for two.
