Introduction

This is an adaptation of another quiche recipe submitted my another SP member. This is an adaptation of another quiche recipe submitted my another SP member.
Number of Servings: 6

Ingredients

    8oz. imitation crab meat
    4oz. part-skim mozzarella cheese, shredded (may use 1 cup shredded mozzarella)
    3/4 frozen cut-leaf spinach
    2 tbsp. minced onion
    4 eggs
    1 cup 2% milk
    1/2 tsp. salt
    1/2 tsp. ground mustard
    1/4 tsp. black peppper
    dash paprika

Directions

Pre-heat oven to 400F. Spray 9-inch pie plate with non-stick spray. In a medium bowl, flake crab meat with fork. Add cheese and minced onion. Toss to combine. Press into bottom of pie plate. Spread spinach over the top of the meat. In same bowl, beat eggs, milk, and remaining spices. Pour over the meat in pie plate. Bake for 40 minutes, until completely set in middle.

Serves 6.

    Very Good
    Really good! I used 1% milk and added 1/4 each of tomato and orange pepper that I had on hand. I also added 1 diced portobella mushroom cap and used shallots instead of onion. - 11/3/09
