Ingredients

    1 serving Chicken, Perdue Chicken breasts
    1 dash Salt
    1 dash Pepper, black
    1 tbsp Extra Virgin Olive Oil
    2 oz Onion, sweet, raw, chopped
    1 serving Fresh Green Beans (1 cup), chopped
    2 serving fresh mushrooms, sliced (0.25 cup), chopped or sliced
    .5 cup (8 fl oz) Chicken Broth or Bouillon
    1 tsp Thyme, fresh, pulled from stem
    2 serving Garlic - minced (1 tsp) (by ELLERCADE)
    2 tbsp Parsley, chopped
    2 tbsp Heavy Whipping Cream
    .5 tbsp Butter, salted
    1 small (3" long) Scallions, raw, chopped

Add/remove any veggies you like!


Directions

Preheat oven to 375.
Season chicken breast with S&P.
Heat ovenproof skillet over medium and add 1/2 tablespoon of olive oil. Brown chicken about 5 minutes per side. Remove to a plate.
Add 1/2 tablespoon olive oil to the hot pan. Saute mushrooms for a minute or two, then add minced garlic, chopped onion and green beans. Saute until mushrooms have released their liquid.
Add chicken broth and thyme, scrape bottom of pan. Simmer for about 3 minutes.
Add cream, butter and parsley, then return chicken and juices to the skillet.
Transfer to oven, covered, for 10 minutes or until chicken is done. Sprinkle with chopped scallions.
