Introduction

Ingredients

    2 tbsp Olive Oil
    2lbs Chicken Breast, no skin, cubed
    1 clove Garlic minced
    1 jar Newman's Own Sockarooni Sauce
    2 1/2 cup uncooked angel hair pasta
    1 cup Parmesan Cheese, shredded
    1 large sweet red bell pepper, chopped
    12 oz serving Baby Bella Mushrooms sliced
    2 cups water

Tips

Although Paul Newman's Sockarooni sauce has a little kick to it. I add an additional tablespoon or two of crushed red pepper to the pot of pasta for a little added heat.


Directions

Sear chicken breast pieces and mushrooms on "saute" setting on the Instant Pot in olive oil with garlic for about 5 minutes. Add water, sauce and then pasta. Push pasta down to submerge under water/sauce. Set Instant Pot to "pressure cooker" high for 10 minutes. Do "instant release" of steam/pressure when done so to not overcook the pasta. Stir in shredded Parmesan and red bell pepper. Let sit for 5 minutes then serve.
