Ingredients

    1 15-oz. can pinto beans, rinsed and drained
    1 15-oz. can beets, drained and chopped
    2 celery stalks, chopped
    1 red bell pepper, seeded and chopped
    1 green bell pepper, seeded and chopped
    1 small red onion, chopped
    3 tbsp fresh lemon juice
    2 tsp ground cumin
    1 tsp ground coriander
    1/2 tsp salt
    1/4 tsp freshly ground black pepper

Directions

Combine the beans, beets, celery, bell peppers, and onion in a serving bowl. Add the lemon juice, cumin, coriander, salt, and ground pepper; toss to mix.

May be served immediately or stored for up to 2 days in an airtight container in the refrigerator.
