Ingredients

1 c dry lentils, well rinsed
2½ c water
½ t salt
1 T olive oil
½ medium onion, diced
1 medium carrot, diced
½ t pepper
1 t soy sauce, optional
¾ c rolled oats, finely ground
¾ c bread crumbs
Directions
Put the lentils, water and salt in a medium sauce pan, and bring to a boil. Reduce to medium heat, and simmer until the lentils are soft and most of the water is gone (approx. 45 minutes)
Saute the onions and carrots until soft.
Mix the lentils, onions, carrots, pepper and soy sauce in a large bowl. Add the bread crumbs and oats, and mix thoroughly.
Form the mixture into a loaf, and bake at 400 degrees F for approximately 20 minutes!
