Ingredients

1 sweetpotato, 5" long Sweet potato
.25 cup, chopped Green Peppers (bell peppers)
1 tbsp chopped Onions, raw
2 extra large Egg, fresh, whole, raw
.5 tbsp Extra Virgin Olive Oil
Directions
Wash and peel and cube sweet potato. Microwave for a 90 seconds. Allow to cool a bit. Meanwhile,beat 2 eggs in a small bow. Add a tablespoon of water to skillet, add bell pepper and onion. Salt and pepper to taste. Sautee/steam until soft. Remove from skillet. Mix sweet potato peppers and onions. Heat oil in skillet. Add potato mixture. Pour eggs over sweet potato mixture. Cook until firm. Cut in half and flip to cook the other side.
