Introduction

I made this today by just putting in what veggies I had and some shrimp, added some lemon juice and seasonings.... IT WAS GREAT! I made this today by just putting in what veggies I had and some shrimp, added some lemon juice and seasonings.... IT WAS GREAT!

Ingredients

    shrimp (fresh 50)
    bell pepper ( one half cut into strips)
    mushrooms (about a cup sliced)
    onion (fresh chopped)
    squash (one large cut into pieces)
    zucchini (one cup sliced)

Directions

chop up all the veggies. peel and skin the shrimp set aside. in a medium sized frying pan sautee the onions with a few sprays of nonstick cooking spray. add in the mushrooms. let simmer a few minutes. add in the rest of the veggies. Let cook for a few minutes. add in the shrimp. cook until pink. add in the lemon juice and some adobo seasoning.
